I made up this Greek salad the other day as part of my healthy eating plan. It was so yummy I had to share:
2 cups shredded Romaine lettuce
1/2 cup grape tomatoes
1/4 cup green pepper, cut into 1/2 inch chunks
1/4 cup red pepper, cut into 1/2 inch chunks
1/2 cup cucumber, cut into 3/4 inch chunks
2 Tbsp. red onion, diced
1/2 can chunk light tuna in water, drained
1/4 cup Kraft feta cheese crumbles (I used the one with oregano, sundried tomatoes and cracked peppercorns)
3 Tbsp Renees Mediterranean Greek dressing
Layer in order and enjoy! Approximately 450 Calories and it’s a huge salad!
